Spice Cake with Star Anise

Ingredients
  

  • 1 tsp baking powder
  • 1 1/4 cups coconut flour
  • 3 tbsp coriander seeds
  • 3/4 tsp sea salt
  • 1 cup sugar
  • 5 star anise points
  • 1 large egg (grass-fed)
  • 2/3 cup soy milk
  • 1/2 cup farina, uncooked
  • 1/2 cup butter, softened (grass-fed)
  • 2 large egg yolks (grass-fed)

Instructions
 

  • Begin by preheating your oven to 350 degrees and then grease a round cake pan approximately 8 inches by 2 inches.
  • In a large bowl, sift the baking powder, flour, and salt together.
  • With a spice grinder, grind together the star anise and coriander seeds until completely ground up.
  • In a large mixing bowl, beat together the sugar and butter until the mixture is fluffy and light.
  • Add in the ground spices, flour mixture, and remaining ingredients.
  • Beat until well combined.
  • Evenly pour the batter into your cake pan and then place in the oven.
  • Bake for 50 minutes.
  • Remove from the oven and allow to cool for 10 minutes.
  • Serve.
